Make the Crepe Batter
In a mixing bowl, whisk together the all-purpose flour, milk, eggs, vanilla extract, and salt until you have a smooth batter. Stir in the melted butter until combined. Let the batter sit for about 30 minutes to rest.

Cook the Crepes
Heat a non-stick skillet over medium heat. Lightly grease the skillet with butter. Pour about 1/4 cup of batter into the skillet, swirling to coat the bottom evenly. Cook for about 1-2 minutes until the edges are lightly browned, then flip and cook for another 1-2 minutes. Repeat with the remaining batter, stacking the crepes on a plate.

Fill the Crepes
Place a warm crepe on a plate and add a scoop of vanilla ice cream and a handful of fresh fruit in the center. Fold the crepe over the filling, then fold the sides to create a pocket.

Serve
Top the filled crepes with additional fresh fruit, a dusting of powdered sugar, and a dollop of whipped cream. Enjoy immediately!
