    Make the Crepe Batter

    In a mixing bowl, whisk together the all-purpose flour, eggs, milk, melted butter, and a pinch of salt until smooth. Let the batter rest for at least 30 minutes.

    Prepare the Mascarpone Filling

    In a separate bowl, combine the mascarpone cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy. Set aside.

    Make the Crepes

    Heat a non-stick skillet over medium heat. Lightly grease with butter. Pour about 1/4 cup of the crepe batter into the skillet, swirling to coat the bottom evenly. Cook for about 1-2 minutes until the edges start to lift. Flip and cook for an additional minute. Repeat with remaining batter, stacking the crepes on a plate.

    Prepare the Berries

    In a blender or food processor, puree half of the mixed berries until smooth. You can sweeten with a little sugar if desired. Leave the rest of the berries whole for topping.

    Assemble the Crepes

    Spread a generous spoonful of the mascarpone filling onto one half of each crepe. Drizzle some of the berry puree over the filling, then fold the crepe in half or roll it up.

    Place the filled crepes on a serving plate, top with more whole berries, sprinkle with lemon zest and additional powdered sugar. Serve warm.
