Mash the Potatoes
Drain the potatoes and let them cool slightly. Mash them in a large bowl until smooth and there are no lumps.

Shape the Croquettes
With your hands, take a small amount of the mixture and shape it into a small oval or cylindrical croquette. Repeat until all the mixture is used.

Prepare for Frying
In a shallow dish, place the breadcrumbs. Roll each croquette in the breadcrumbs until fully coated.

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat. You can test if the oil is hot enough by dropping a small piece of bread in; it should sizzle immediately.

Fry the Croquettes
Carefully place several croquettes in the hot oil, ensuring not to overcrowd the pan. Fry for about 3-4 minutes on each side or until golden brown.

Drain and Serve
Once golden brown, remove the croquettes from the oil and place them on a plate lined with paper towels to drain excess oil. Serve hot with tomato sauce on the side.
