Prepare the Plantains
Peel the ripe plantains by cutting off the ends and slicing the skin lengthwise. Carefully remove the skin and cut the plantains into diagonal slices, about 1 inch thick.

Heat the Oil
In a large skillet, heat the vegetable oil over medium heat until hot but not smoking.

Fry the Plantains
Add the sliced plantains to the hot oil in a single layer. Fry for about 3-4 minutes on each side or until they are golden brown and caramelized. You may need to do this in batches.

Add Sugar and Salt
Once the plantains are fried, sprinkle them with brown sugar and salt while they are still hot. Toss gently to coat evenly.

Serve
Remove the sweet plantains from the skillet and place them on a plate lined with paper towels to drain excess oil. Serve warm as a side dish or snack.
