Peel and Chop Cassava
Begin by peeling the cassava to remove the tough outer skin. Chop the cassava into 2-3 inch pieces.

Boil Cassava
In a large pot, add the chopped cassava and pour in the water. Add salt and bring to a boil. Once boiling, reduce the heat and let it simmer for about 20-25 minutes or until the cassava is tender.

Drain and Cool
Once tender, drain the cassava and let it cool slightly. You can also rinse it under cold water to stop the cooking process.

Fry Cassava (Optional)
For a crispy texture, heat olive oil in a frying pan over medium heat. Cut the boiled cassava into fries or desired shapes and fry them until golden brown on all sides. Remove and drain on paper towels.

Serve the cassava hot, either plain, with dipping sauce, or as a side dish.
