Prepare the Churro Batter

Combine Ingredients
In a medium saucepan, combine 1 cup of water, 2 tablespoons of unsalted butter, 1 tablespoon of granulated sugar, and 1 teaspoon of salt. Heat over medium heat until the butter melts.

Incorporate Eggs
Allow the dough to cool slightly, then add 2 large eggs, one at a time, mixing well after each addition. Stir in 1 teaspoon of vanilla extract until fully combined.
Prepare Cinnamon Sugar

Mix Cinnamon Sugar
In a shallow bowl, combine 1 cup of granulated sugar and 2 tablespoons of ground cinnamon. Set aside.
Fry the Churros

Heat Oil
In a deep frying pan, heat 4 cups of vegetable oil over medium-high heat until it reaches 350°F (175°C).

Pipe Churros
Transfer the churro batter into a pastry bag fitted with a large star tip. Carefully pipe 4-6 inch long strips of dough directly into the hot oil.

Fry and Drain
Fry the churros until golden brown, about 2-3 minutes per side. Use a slotted spoon to remove the churros from the oil and drain on paper towels.
