Chips
1. Prepare the Tortillas
Stack the corn tortillas and cut them into triangles (like a pizza). You can cut each tortilla into 6 to 8 triangles depending on your preference.
2. Heat the Oil
In a deep frying pan or skillet, pour the vegetable oil and heat it over medium-high heat until it's hot but not smoking.
3. Fry the Chips
Carefully add a few tortilla triangles to the hot oil, making sure not to overcrowd the pan. Fry each batch for about 2-3 minutes or until they turn golden brown and crispy. Use a slotted spoon to remove the chips and transfer them to a paper towel-lined plate.
4. Season with Salt
While the chips are still warm, sprinkle them with salt to taste.
Salsa
5. Chop the Ingredients
Finely chop the tomatoes, onion, cilantro, and jalapeño. Make sure to remove the seeds from the jalapeño if you prefer less heat.
6. Mix the Salsa
In a medium bowl, combine the chopped tomatoes, onion, cilantro, and jalapeño. Add lime juice and salt, mixing everything together well.
7. Taste and Adjust
Taste the salsa and adjust seasoning with more salt or lime juice if necessary. Let it sit for at least 10 minutes to allow the flavors to meld.
