Fajita beef or chicken with grilled onions & peppers in flour tortillas. Served with lettuce, tomatoes, cheese & guacamole.
In a bowl, mix olive oil, salt, black pepper, cumin, and chili powder. Add the fajita beef or chicken, and marinate for at least 30 minutes.
Slice the onion and bell peppers. Heat a grill or skillet over medium-high heat. Add the sliced vegetables and grill until they are tender and slightly charred, about 5-7 minutes. Remove from heat and set aside.
In the same skillet or grill, cook the marinated fajita beef or chicken for about 5-8 minutes per side, or until cooked through and nicely charred. Remove from heat and let rest for a few minutes before slicing.
Warm the flour tortillas in a pan or microwave. Fill each tortilla with sliced meat, grilled onions, and peppers. Top with lettuce, tomatoes, cheese, and a generous scoop of guacamole.
Serve the tacos al carbon immediately with extra guacamole and toppings on the side.
