Flour tortillas stuffed with cheese, green chiles & onion. Served with guacamole, sour cream & tomatoes. Add fajita chicken.
In a mixing bowl, combine the shredded cheese, canned green chiles, diced onion, and cooked fajita chicken. Season with salt and pepper to taste.
Heat a skillet over medium heat and add 1 tablespoon of oil or butter. Place one flour tortilla in the skillet. Spread a generous amount of the filling mixture on half of the tortilla, then fold the other half over.
Cook for 3-4 minutes on each side or until the tortilla is golden brown and the cheese is melted. Repeat with the remaining tortillas and filling.
Cut the quesadillas into wedges and serve hot with guacamole, sour cream, and diced tomatoes on the side.
