Prepare the Taco Filling
In a skillet over medium heat, cook the ground beef until browned. Drain excess fat and stir in taco seasoning. Add a splash of water and simmer for 5 minutes.

Fry the Tortillas
In a separate pan, heat vegetable oil over medium heat. Fry each corn tortilla for about 30 seconds on each side until crispy. Drain on paper towels.

Assemble the Tacos
Fill each crispy tortilla with the beef mixture, shredded lettuce, diced tomatoes, and olives. Top with sour cream and sliced avocado.

Prepare the Enchiladas
Preheat the oven to 350°F (175°C). Take corn tortillas, fill each with shredded cheese and roll them up. Place in a baking dish, seam-side down.

Add Sauce and Bake
Pour enchilada sauce over the rolled tortillas, covering them completely. Sprinkle extra cheese on top and bake for 20 minutes until bubbly.
