    Cook the Meat

    In a skillet, heat olive oil over medium heat. Add chopped onion and garlic, sauté until softened. Add ground beef and cook until browned. Stir in cumin, chili powder, salt, and pepper. Cook for an additional 5 minutes, then remove from heat.

    Prepare the Tortillas

    Warm corn tortillas in a dry skillet or microwave until pliable.

    Fill the Tortillas

    For each tortilla, place a portion of the cooked beef, shredded chicken, or cheese in the center. Roll the tortilla tightly and place seam-side down in a greased baking dish.

    Add Sauce

    Pour your choice of Signature Sauce over the enchiladas, ensuring they are well coated.

    Bake

    Preheat the oven to 350°F (175°C). Cover the dish with foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes until the cheese is bubbly and golden.

    Serve

    Remove from oven and let cool for a few minutes. Serve hot, garnished with chopped cilantro or sour cream if desired.
