Prepare the Churro Dough
In a medium saucepan, combine water, butter, and granulated sugar. Bring to a boil over medium heat. Once boiling, remove from heat and stir in flour, baking powder, cinnamon, and salt until smooth. Allow to cool for a few minutes.

Add Eggs
Once the mixture is cool enough, add eggs one at a time, mixing well after each addition until the dough is smooth and fully combined.

Heat the Oil
In a deep frying pan or pot, heat vegetable oil over medium-high heat until it reaches about 350°F (175°C).

Fry the Churro Bites
Spoon the churro dough into a piping bag fitted with a star tip. Pipe small bite-sized pieces directly into the hot oil. Fry for about 2-3 minutes or until golden brown. Remove and drain on paper towels.

Coat in Cinnamon Sugar
In a shallow bowl, combine granulated sugar and cinnamon. Toss the fried churro bites in the cinnamon sugar mixture until well coated.

Serve with Caramel
Place churro bites in a basket and serve warm with caramel dipping sauce on the side.
