Making Cavatelli
Prepare the Dough
In a large bowl, mix the semolina flour, all-purpose flour, and salt together. Create a well in the center and add the water and olive oil. Gradually combine the flour with the liquid until a dough forms.
Knead the Dough
Transfer the dough to a floured surface and knead for about 5-7 minutes until it becomes smooth and elastic. If the dough is too sticky, sprinkle a little more flour as needed.
Rest the Dough
Cover the dough with a damp cloth and let it rest for at least 30 minutes at room temperature. This helps to relax the gluten.
Shape the Cavatelli
Divide the dough into small pieces. Roll each piece into a rope about 1/2 inch thick, then cut into small pieces about 1 inch long. Using your thumb, press down on each piece to create the traditional cavatelli shape.
Cook the Cavatelli
Bring a large pot of salted water to a boil. Add the cavatelli and cook for about 3-5 minutes until they float to the surface. Drain and serve with your choice of sauce.
