    Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper and set aside.

    In a medium bowl, whisk together flour, cream of tartar, baking soda, and salt.

    In a large bowl, beat butter and granulated sugar on medium-high speed until pale and fluffy, about 2–3 minutes.

    Beat in eggs one at a time, then add vanilla extract and mix until combined.

    Optional: If making SnickerDoodles with Snickers, fold in the chopped Snickers pieces until evenly distributed.

    Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. The dough will be soft and slightly tacky.

    In a small bowl, whisk together 3 tablespoons granulated sugar and 3 teaspoons ground cinnamon to create the cinnamon-sugar coating.

    Scoop dough into balls (about 1.5 tablespoons per ball), roll each ball in the cinnamon-sugar coating, and place on the prepared sheets about 2 inches apart.

    Bake for 9–11 minutes, until the edges are set and centers are soft. Do not overbake.

    Remove cookies from oven and let them cool on the sheets for 2–3 minutes, then transfer to a wire rack to cool completely.
