1. Prepare rice and mise en place
If using day-old rice, break up any clumps with a fork and spread on a tray to dry slightly. Gather jerk seasoning, vegetables, eggs, soy sauce, pineapple, lime, and garnishes so everything is ready to go.
2. Bloom jerk seasoning
Heat a large wok or skillet over medium-high heat and add the vegetable oil. Stir in jerk seasoning and cook for about 30 seconds until fragrant.
3. Sauté aromatics and vegetables
Add onion to the pan; sauté until translucent. Add garlic and ginger; cook until fragrant, about 1 minute. Stir in red bell pepper and carrot; cook 2–3 minutes until just softened.
4. Scramble eggs
Push vegetables to the side, pour beaten eggs into the space, and scramble until just set. Then mix with vegetables.
5. Fry rice with pineapple and peas
Add the cooled rice and pineapple chunks; stir-fry, breaking up any remaining clumps. Add peas and continue to stir-fry for 2–3 minutes. Add soy sauce and mix until evenly seasoned.
6. Finish and garnish
Stir in sliced green onions and lime juice. Drizzle with sesame oil, adjust seasoning with salt if needed, and serve hot.
