Gather and prep all ingredients: ensure the rice is cold or day-old, dice the pork, finely chop the onion, mince the garlic, beat the eggs and have the peas ready. Set aside green onions for garnish.

Heat a large wok or skillet over medium-high heat and add 1 tablespoon of neutral oil. Add the pork and cook, stirring, until browned and cooked through, about 4–6 minutes. Remove pork from the pan and set aside.

Stir in the diced carrots and frozen peas. Cook for 2–3 minutes until the vegetables are tender but still bright.
