    Marinate pork

    In a bowl, combine the diced pork with 1 tablespoon soy sauce, 0.25 teaspoon salt, and 0.125 teaspoon black pepper. Let marinate 10 minutes while you prep the other ingredients.

    Heat aromatics

    Heat 1 tablespoon vegetable oil in a large skillet or wok over medium-high heat. Add minced garlic and sauté for about 30 seconds until fragrant.

    Cook pork

    Add the marinated pork to the hot pan and cook until browned and just cooked through, about 4–5 minutes. Remove pork to a plate.

    Scramble eggs

    In the same pan, push pork aside and pour in the eggs. Scramble until just set, then transfer eggs to a plate.

    Stir-fry vegetables

    Add peas and carrots to the pan and stir-fry for 2–3 minutes until slightly tender.

    Return pork and eggs to the pan. Add 2 tablespoons soy sauce, 1 tablespoon oyster sauce (optional), and 1 teaspoon sesame oil. Toss to coat evenly and heat through.
