Marinate pork
In a bowl, combine the diced pork with 1 tablespoon soy sauce, 0.25 teaspoon salt, and 0.125 teaspoon black pepper. Let marinate 10 minutes while you prep the other ingredients.

Heat 1 tablespoon vegetable oil in a large skillet or wok over medium-high heat. Add minced garlic and sauté for about 30 seconds until fragrant.

Add the marinated pork to the hot pan and cook until browned and just cooked through, about 4–5 minutes. Remove pork to a plate.

Add rice and combine
Add the chilled cooked rice to the skillet. Break up any clumps and stir-fry with vegetables for 2–3 minutes.

Return pork and eggs to the pan. Add 2 tablespoons soy sauce, 1 tablespoon oyster sauce (optional), and 1 teaspoon sesame oil. Toss to coat evenly and heat through.

Stir in green onions, then season with additional salt and black pepper to taste if needed. Remove from heat.
