    Marinate Pork (Optional)

    In a bowl, mix pork with 1 tablespoon soy sauce and 1 teaspoon sesame oil. Toss to coat and let rest 10 minutes.

    Beat eggs; set aside. Finely chop onion, mince garlic, and measure peas and carrots.

Stir-Fry

    Cook Pork

    Heat 1 tablespoon neutral oil in a large wok over medium-high heat. Add pork and cook until browned and cooked through, 3–5 minutes. Transfer to a plate.

    Cook Aromatics and Veggies

    In the same wok, add onion and garlic; sauté 1–2 minutes until translucent. Add peas and carrots; cook until tender.

Combine with Rice

    Scramble Eggs

    Push vegetables to the side, pour beaten eggs into the cleared space, and scramble until just set.

    Add Rice and Stir-Fry

    Add cold cooked rice to the wok. Break up any clumps and stir-fry until heated through and slightly crispy.

Season and Finish

    Return pork to the pan with the rice. Pour in 2 more tablespoons soy sauce and 1 tablespoon oyster sauce; stir to coat evenly.
