Marinade and prep

    Prepare marinade

    In a large bowl, whisk together olive oil, smoked paprika, ground cumin, garlic powder, onion powder, salt, and black pepper. Stir in fresh lime juice.

    Marinate chicken

    Pat chicken dry. Add thighs to the bowl and rub the marinade all over the skin, sliding some under the skin where possible. Add minced jalapeño.

    Cover and refrigerate for 30-60 minutes to let flavors penetrate.

Glaze and finish

    Make diablo glaze

    In a small bowl, whisk together honey, hot sauce, lime juice, and water until smooth. This glaze will be brushed onto the chicken during cooking.

Cooking

    Sear chicken

    Heat a large skillet over medium-high heat. Place the marinated chicken thighs skin-side down and sear until the skin is deeply browned, about 5-6 minutes.

    Flip and glaze

    Flip the chicken, brush generously with the diablo glaze, and cook another 6-8 minutes, basting occasionally with glaze. If the sauce thickens, add a splash of water.

    Finish cooking

    Reduce heat to medium and cook until the chicken reaches an internal temperature of 165°F (74°C), about 4-6 more minutes.

Serve
