Whisk the eggs with a pinch of salt in a small bowl and set aside.

Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Pour in the eggs and scramble until just set; transfer to a plate.

Add the remaining 1 tablespoon of oil to the skillet. Add diced onion and sauté until translucent and fragrant, about 2-3 minutes.
