In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic; cook for 3-4 minutes until the onion is soft and translucent.

Cook the meat
Add the lean ground beef to the skillet. Break it up with a spatula and cook until browned and no longer pink, about 5-7 minutes.

Season
Stir in the ground cumin, mild chili powder, salt, and black pepper. Cook for 1 minute to bloom the spices.
Combine Beans & Simmer

Add beans and corn
Stir in the drained beans and corn kernels. Pour in the broth and bring to a gentle simmer. Let simmer 6-8 minutes until flavors meld and the mixture is heated through.
Rice & Assemble Bowls

Rice
If rice is not yet cooked, prepare 2 cups of cooked white rice according to package directions and fluff with a fork.

To make each Kid Bowl, place 1/2 cup cooked rice into a serving bowl, spoon a portion of the meat-and-bean mixture over the rice, then top with 2 tablespoons shredded cheddar. Add a spoonful of pico de gallo or mild salsa if desired.
