Make the jerk marinade

In a blender or large bowl, combine Scotch bonnet peppers, dried thyme, ground allspice, garlic, fresh ginger, scallions, soy sauce, brown sugar, fresh lime juice, vegetable oil, ground cinnamon, ground nutmeg, salt, and black pepper. Blend or whisk until the mixture is smooth and well combined.
Marinate the chicken

Pat the chicken thighs dry with paper towels. Place the chicken in a large bowl or zip-top bag and add the jerk marinade. Turn the pieces to thoroughly coat. Seal and refrigerate for at least 2 hours, or up to overnight for deeper flavor.
Grill and finish

When ready to cook, preheat a grill to medium-high (about 375-425°F / 190-220°C). Remove the chicken from the marinade, letting excess drip off. Grill the chicken for about 6-8 minutes per side, or until the internal temperature reaches 165°F (74°C) and the skin is nicely charred in spots. If desired, baste with a little reserved marinade during the last few minutes of grilling, but discard any marinade that contacted raw chicken.

Transfer the grilled jerk chicken to a plate and let it rest for 5-10 minutes before serving. Serve with rice and peas, grilled vegetables, or a fresh salad.
