Prepare Jade green marinade
In a blender or bowl, combine cilantro leaves, lime juice, minced garlic, grated ginger, honey, soy sauce, rice vinegar, red chili flakes, sesame oil, and salt. Blend or whisk until bright green and fragrant.

Marinate the chicken
Place the chicken thighs in a large bowl and pour half of the Jade marinade over them. Toss to coat evenly. Cover and refrigerate 30-60 minutes to let the flavors penetrate.

Make the red glaze
In a small bowl, whisk gochujang with the remaining honey, rice vinegar, and soy sauce until smooth. If too thick, whisk in a teaspoon of water to loosen.

Preheat and prepare to cook
Preheat oven to 425F (220C). Lightly oil or spray a baking dish or sheet lined with parchment.

Sear the marinated chicken
Heat a skillet over medium-high heat and add 1 teaspoon sesame oil. Sear the marinated chicken thighs on both sides for 2-3 minutes until golden. This builds color and locks in flavors.

Coat with glaze and roast
Brush or toss the seared chicken with the red glaze and arrange on the prepared baking dish. Bake for 12-15 minutes, brushing with more glaze halfway through, until the chicken reaches 165F (75C) internal temperature.

Finish and garnish
Remove from oven, drizzle any remaining glaze, sprinkle sesame seeds, and scatter extra cilantro. Serve with lime wedges on the side.
