    Marinate chicken

    In a bowl, combine chicken with 3 tablespoons soy sauce, 1 tablespoon Shaoxing wine, 1 tablespoon cornstarch, 1 teaspoon sesame oil, 4 minced garlic cloves, and 1 tablespoon grated ginger. Mix to coat and let rest 15-20 minutes.

    Marinate beef

    In another bowl, toss the beef with 2 tablespoons soy sauce, 1 tablespoon rice wine, and 1/2 teaspoon black pepper. Let marinate for 10-15 minutes.

    Cook rice

    Rinse jasmine rice until the water runs clear. In a pot, combine 2 cups rice with 4 cups water (add a pinch of salt if desired). Bring to a boil, reduce to a simmer, cover, and cook 15-18 minutes until tender. Remove from heat and let steam, covered, for 5 minutes.

    Cook noodles

    Bring a large pot of salted water to a boil. Add dry lo mein noodles and cook until just al dente according to package instructions (about 3-5 minutes). Drain, rinse briefly with water, and toss with 1 teaspoon oil to prevent sticking.

    Stir-fry chicken

    In a large wok or skillet, heat 1 tablespoon neutral oil over high heat. Add the remaining minced garlic and ginger from the chicken marinade and stir-fry 15-30 seconds until fragrant. Add the marinated chicken and stir-fry until cooked through and lightly caramelized, about 5-6 minutes. Remove from wok and set aside.

    Stir-fry beef

    In the same wok, add a touch more oil if needed. Add the marinated beef and stir-fry over high heat for 2-3 minutes until browned; remove from wok and set aside.

    Make stir-fry sauce

    In a small bowl whisk together 2 tablespoons soy sauce, 1 tablespoon oyster sauce, 1 tablespoon hoisin sauce, 1 teaspoon sugar, 1 teaspoon rice vinegar, and 1/4 cup water until smooth.

    Combine and glaze

    Return chicken to the wok, pour in the sauce, and bring to a simmer. Add the beef back and cook 1-2 minutes, tossing to coat evenly and slightly thickening the sauce. If you like it saucier, add a splash more water.

    Assemble bases

    For each bowl, lay down a bed of jasmine rice and a bed of lo mein noodles. This is the two-base concept: base 1 is rice, base 2 is noodles.

    Finish and serve

    Divide the protein mixture over the two bases in each bowl. Garnish with sliced green onions and sesame seeds. Serve hot; offer optional chili flakes or steamed vegetables on the side.
