Marinating the pork

Trim the pork shoulder, removing excess fat and silvery membranes. Lightly score the surface to help the marinade penetrate.

In a large bowl, whisk together Hoisin sauce, Light soy sauce, Dark soy sauce, Shaoxing wine, Honey, Brown sugar, Chinese five-spice powder, minced garlic, Red food coloring, and Sesame oil until smooth.

Place the pork in a large resealable bag or shallow dish. Pour the marinade over the pork, turning to coat all sides. Seal and refrigerate for 4-6 hours, turning the pork halfway through.
Roasting and glazing

Preheat the oven to 400°F (200°C). Line a baking sheet with foil and place a rack on top.

Remove the pork from the marinade, reserving the liquid. Place the pork on the rack; roast for 25-30 minutes, until the internal temperature reaches about 145°F (63°C). Baste with the reserved marinade every 7-8 minutes to create a lacquered glaze. If the marinade runs low, whisk in a splash of water.

For a deeper lacquer, optional: broil for 2-3 minutes at the end to caramelize the surface, watching closely to avoid burning.
Rest and serve

Let the meat rest for 5-10 minutes before slicing. Slice thinly against the grain.

Serve the Char Siu-style pork with steamed rice or fried rice, and optionally with sliced scallions or sesame seeds as garnish.
