    If using freshly cooked rice, spread on a tray to cool for 15-20 minutes to remove excess moisture; for best texture, use day-old rice.

    Prep all ingredients: dice chicken into bite-sized pieces, whisk the eggs, mince the garlic, dice the onion, and chop carrots. Have peas ready.

    Heat a large wok or skillet over high heat and add 1 tablespoon vegetable oil. Add chicken and cook until no longer pink, about 6-8 minutes. Remove from pan and set aside.
