    Cook the rice

    Rinse 1 cup white rice under cold water. In a small pot, combine the rinsed rice with 2 cups water and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let stand 5 minutes; fluff with a fork.

    Sauté aromatics

    In a large skillet, heat 1 tablespoon olive oil over medium heat. Add the chopped onion and cook until translucent, about 3–4 minutes. Add minced garlic and cook for 30 seconds.

    Brown the beef

    Add 1 pound ground beef to the skillet. Cook until browned and crumbly, breaking up with a spatula as it cooks. Drain excess fat if needed.

    Add spices

    Stir in chili powder, cumin, paprika, and oregano. Cook for 1–2 minutes to bloom the spices. Season with salt and black pepper to taste.

    Add beans

    Add the drained black beans to the beef. Heat through, and if you like, mash a portion of the beans to thicken the mixture.

    Warm tortillas

    Warm the flour tortillas in a dry skillet or microwave until pliable.

    Assemble burritos

    To each tortilla, add a layer of rice, then a scoop of beef and bean mixture. Top with shredded cheese, salsa, sour cream, lettuce, diced tomato, cilantro, and avocado slices. Finish with a squeeze of lime if desired.

    Roll the burritos closed, tucking in the sides. Slice in half if preferred and serve with extra salsa and lime wedges.
