Preparation Steps

  1. 1

    Prepare the Cure

In a bowl, mix together the kosher salt, brown sugar, black peppercorns, and dill to create a dry brine.

  2. 2

    Cure the Salmon

Place the salmon fillet skin-side down in a dish. Cover the salmon evenly with the brine mixture, making sure to press it into the flesh. Cover the dish with plastic wrap and refrigerate for 12-24 hours.

  3. 3

    Rinse and Dry

After curing, rinse the salmon under cold water to remove the brine. Pat dry with paper towels.

  4. 4

    Smoke the Salmon

Preheat your smoker to 200°F (93°C). Soak wood chips in water for 30 minutes, then drain. Place the salmon in the smoker, brush with liquid smoke, and add soaked wood chips. Smoke for 1-2 hours until the salmon is cooked through and has a nice smoky flavor.

  5. 5

    Serve

Slice the smoked salmon thinly and serve with lemon wedges on the side.
