Marinate the Lamb Chops

In a bowl, combine olive oil, minced garlic, chopped rosemary, chopped thyme, salt, black pepper, and lemon juice. Mix well to form a marinade. Add the lamb chops to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, preferably overnight for maximum flavor.

Preheat the Grill

Preheat your grill to medium-high heat. Make sure the grill grates are clean and lightly oiled to prevent sticking.

Grill the Lamb Chops

Remove the lamb chops from the marinade and let excess marinade drip off. Place the chops on the grill and cook for about 4-5 minutes on each side for medium-rare, or longer if desired. Use a meat thermometer to check for an internal temperature of 145°F (63°C) for medium-rare.

Rest and Serve

Once cooked to your liking, remove the lamb chops from the grill and let them rest for about 5 minutes. Serve warm, garnished with additional rosemary or lemon wedges if desired.
