Cook the Rice
In a medium saucepan, combine the white rice and water. Bring to a boil over high heat, then reduce the heat to low, cover, and simmer for about 15 minutes or until the rice is tender and the water is absorbed. Remove from heat and let it sit covered for an additional 5 minutes.

Sauté the Vegetables
In a large skillet, heat the olive oil over medium heat. Add the chopped onion, garlic, and bell pepper. Sauté for about 5 minutes, or until the vegetables are soft and fragrant.

Cook the Shrimp
Add the shrimp to the skillet and season with salt and black pepper. Cook for about 3-4 minutes, stirring occasionally, until the shrimp are pink and cooked through.

Add the Catupiry Cheese
Lower the heat and stir in the Catupiry cheese. Cook for another 2-3 minutes until the cheese is melted and the shrimp are evenly coated in the creamy sauce.
