Method
Preparation and Cooking
- 1
Marinate the Meats
In a large bowl, combine olive oil, minced garlic, salt, black pepper, and chopped fresh herbs. Add the top sirloin, lamb chops, and bacon-wrapped filet mignon to the marinade, ensuring each piece is well-coated. Cover and refrigerate for at least 2 hours, preferably overnight.
- 2
Prepare the Grill
Preheat your grill to high heat. If using charcoal, let the coals burn until they are covered with gray ash. If using gas, preheat for about 10-15 minutes.
- 3
Grill the Meats
Remove the marinated meats from the refrigerator and let them sit at room temperature for about 30 minutes. Grill each meat type separately, turning occasionally until they reach your desired level of doneness: about 5-7 minutes per side for the top sirloin, 4-5 minutes per side for the lamb, and 6-8 minutes for the bacon-wrapped filet mignon. Use a meat thermometer to ensure the internal temperature reaches 145°F for lamb and 130°F for filet mignon.
- 4
Rest and Serve
Once grilled, let the meats rest for about 5 minutes before slicing. Serve on a large platter and enjoy with chimichurri sauce and sides of your choice.
