    Prepare the Marinade

    In a bowl, mix together minced garlic, rosemary, thyme, olive oil, salt, black pepper, and lemon zest to create a marinade.

    Marinate the Lamb

    Place the leg of lamb in a large resealable plastic bag or dish. Pour the marinade over the lamb, ensuring it's well coated. Seal the bag or cover the dish and refrigerate for at least 4 hours, preferably overnight.

    Preheat the Oven

    Preheat your oven to 350°F (175°C).

    Roast the Lamb

    Remove the lamb from the marinade and place it in a roasting pan. Pour red wine around the lamb. Roast in the preheated oven for about 1.5 to 2 hours, or until the internal temperature reaches 145°F (63°C) for medium-rare.

    Rest and Serve

    Once cooked, remove the lamb from the oven and let it rest for 15 minutes before carving. Serve with your choice of sides.
