    Prepare the Vanilla Base

    In a saucepan, combine the heavy cream, whole milk, sugar, and a pinch of salt. Split the vanilla bean in half, scrape the seeds into the mixture, and add the bean pod as well. Heat the mixture over medium heat until it is hot but not boiling.

    Whisk Egg Yolks

    In a separate bowl, whisk the egg yolks until they are light and frothy. Slowly pour a small amount of the hot cream mixture into the egg yolks while whisking continuously to temper the eggs.

    Combine and Thicken

    Gradually add the tempered egg yolk mixture back into the saucepan with the remaining cream mixture. Cook over low heat, stirring constantly until the mixture thickens enough to coat the back of a spoon.

    Chill the Mixture

    Remove from heat and strain the mixture through a fine-mesh sieve into a clean bowl. Let it cool to room temperature, then cover and refrigerate until completely chilled, about 2 hours or overnight.

    Churn the Ice Cream

    Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

    Freeze

    Transfer the ice cream to an airtight container and freeze for at least 4 hours to harden before serving.
