    Prepare the Polenta

    In a large saucepan, bring the water to a boil. Add salt and gradually whisk in the polenta. Reduce heat to low and cook, stirring frequently, until thickened (about 15-20 minutes).

    Set the Polenta

    Once the polenta is thick, pour it into a greased rectangular dish. Spread it evenly and allow it to cool at room temperature for at least 30 minutes, or until firm.

    Cut the Polenta

    Once cooled, remove the polenta from the dish and cut it into bite-sized squares or triangles.

    Fry the Polenta

    In a large skillet, heat olive oil over medium heat. Dredge each polenta piece in cornmeal, shaking off excess, and then fry in the hot oil until golden brown and crispy on all sides (about 3-4 minutes per side).

    Season and Serve

    Remove fried polenta from the skillet and place on a paper towel to drain excess oil. Season with black pepper and garlic powder to taste. Serve warm.
