Cooking Instructions

  1. 1

    Prepare the Beans

Rinse the black beans under cold water and soak them overnight in a large bowl of water.

  2. 2

    Cook the Meat

In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sauté until translucent. Add the pork shoulder and beef brisket, cooking until browned.

  3. 3

    Add Sausage and Beans

Stir in the smoked sausage, soaked black beans (drained), bay leaves, salt, and pepper. Add enough water to cover the ingredients by about an inch.

  4. 4

    Simmer

Bring to a boil, then reduce the heat to low. Cover and let it simmer for about 2 to 3 hours, or until the beans and meats are tender.

  5. 5

    Serve

Remove the bay leaves before serving. Serve the feijoada over rice with fresh orange slices, farofa, collard greens, and pork cracklings.
