Preparation and Cooking

    Prepare the Chimichurri Sauce

    In a bowl, combine the chopped parsley, cilantro, minced garlic, red wine vinegar, olive oil, red pepper flakes, salt, and black pepper. Mix well and set aside.

    Prepare the Picanha

    Trim any excess fat from the Picanha, leaving a thin layer for flavor. Rub the meat with olive oil, salt, and black pepper.

    Grill the Picanha

    Preheat your grill to high heat. Place the Picanha on the grill, fat side down, and sear for about 5-7 minutes. Flip and continue grilling for another 10-15 minutes, or until the desired doneness is reached (medium-rare is recommended).

    Grill the Jalapenos

    While the meat is grilling, place the jalapenos on the grill and cook for about 5-7 minutes, turning occasionally until charred and tender.

    Serve

    Once the Picanha is done, let it rest for about 10 minutes before slicing against the grain. Serve with the chimichurri sauce and grilled jalapenos.
