Prepare the Filling
In a mixing bowl, combine the artichoke hearts, cream cheese, pesto sauce, grated parmesan cheese, lemon juice, garlic powder, salt, and pepper. Mix until smooth and well combined.

Prepare the Pastry
Preheat your oven to 400°F (200°C). Roll out the thawed puff pastry sheets on a lightly floured surface. Cut the pastry into squares or circles, depending on your preference for the pastries.

Fill the Pastries
Place a spoonful of the artichoke filling onto the center of each pastry square/circle. Fold the pastry over to create a pocket, and seal the edges by pressing them with a fork.

Bake
Place the filled pastries on a baking sheet lined with parchment paper. Bake in the preheated oven for 20-25 minutes or until golden brown and puffed.
