Prepare the Filling
In a large bowl, combine the sliced apples, sugar, ground cinnamon, vanilla extract, and lemon juice. Mix well and set aside to let the flavors meld.

Prepare the Pastry
Preheat the oven to 375°F (190°C). Roll out the puff pastry sheets on a floured surface. If using frozen pastry, thaw according to package instructions before rolling.

Assemble the Strudel
Place the apple filling along the center of each pastry sheet, leaving space on the edges. Fold the edges over the filling and roll the pastry tightly, sealing the edges.

Bake
Brush the top of the strudel with an egg wash (beaten egg) to give it a golden color. Place the strudels on a baking sheet lined with parchment paper and bake for 25-30 minutes or until golden brown.

Serve
Remove the strudel from the oven and let it cool slightly. Slice and serve warm with a scoop of cinnamon ice cream and drizzle with caramel sauce.
