1. Prepare the Meat

Remove the picanha from the refrigerator and let it rest at room temperature for about 30 minutes. This helps the meat cook evenly.

2. Season the Picanha

Generously season the picanha on all sides with kosher salt, black pepper, and garlic powder. Rub the seasonings into the meat to ensure it adheres well.

3. Preheat the Grill

Preheat your grill to high heat, around 450°F (232°C). If using a charcoal grill, ensure the coals are hot and well-distributed.

4. Sear the Meat

Brush the grill grates with olive oil to prevent sticking. Place the picanha fat side down on the grill. Sear for about 4-5 minutes until a nice crust forms.

5. Flip and Cook

Flip the picanha and continue cooking for another 4-5 minutes for medium-rare, adjusting the time if you prefer it more well-done.

6. Add Rosemary

During the last few minutes of cooking, add fresh rosemary on top of the picanha for added flavor.

7. Rest the Meat

Remove the picanha from the grill and let it rest for at least 10 minutes before slicing. This allows the juices to redistribute.

8. Slice and Serve

Slice the picanha against the grain into thin pieces and serve immediately.
