Prepare the Potatoes

Wash and slice the Russet potatoes thinly using a mandoline or a sharp knife. Rinse the slices in cold water to remove excess starch.

Soak the Potatoes

Soak the potato slices in cold water for at least 30 minutes. This helps to make them crispier when fried.

Heat the Oil

In a large heavy-bottomed pot, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

Fry the Chips

Carefully add the soaked potato slices in batches to the hot oil. Fry for about 3-4 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Season the Chips

While still warm, sprinkle the chips with salt and your choice of seasoning (Cajun, BBQ, or Voodoo). Toss to coat evenly.
