Prepare the Shrimp

In a bowl, mix the peeled and deveined shrimp with Cajun seasoning and let it marinate for about 15 minutes.

Set Up Breading Station

In a shallow dish, combine the flour and cornmeal. In another bowl, place the buttermilk.

Bread the Shrimp

Dip each seasoned shrimp into the buttermilk, then coat it with the flour and cornmeal mixture. Set aside on a plate.

Heat the Oil

In a large skillet, heat vegetable oil over medium-high heat until hot (about 350°F or 175°C).

Fry the Shrimp

Carefully add the breaded shrimp to the hot oil in batches. Fry until golden brown and cooked through, about 2-3 minutes per side. Remove shrimp and drain on paper towels.

Assemble the Po'Boys

Slice the French bread loaves lengthwise. Spread remoulade sauce on both sides of the bread. Layer the fried shrimp, followed by lettuce, tomato slices, and red onion.

Cut the sandwiches in half and serve immediately with extra remoulade sauce on the side.
