Prepare the Fish

In a bowl, combine the cajun seasoning with flour and cornmeal. Dip each fish fillet in buttermilk, then coat with the flour mixture, pressing it on to ensure it sticks.

Heat the Oil

In a large skillet, heat the vegetable oil over medium-high heat until hot (about 350°F or 175°C).

Fry the Fish

Carefully add the coated fish fillets to the hot oil, cooking for about 3-4 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Assemble the Po'Boy

Slice the French bread rolls lengthwise. Spread a generous amount of remoulade sauce on both sides. Add shredded lettuce, sliced tomatoes, and red onion. Top with the fried fish fillets.

Serve

Close the sandwich, slice in half if desired, and serve immediately with extra remoulade on the side.
