Prepare the Dough
In a mixing bowl, combine warm milk and yeast. Let it sit for about 5 minutes until foamy. In a separate bowl, whisk together flour, sugar, and salt. Add the yeast mixture, eggs, vanilla extract, and melted butter to the dry ingredients. Mix until a dough forms.
Knead the Dough
Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic. Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
Roll and Cut
After the dough has risen, punch it down and roll it out to about 1/2 inch thickness. Cut into 2-inch squares.
Fry the Beignets
In a deep pot, heat vegetable oil to 350°F (175°C). Fry the dough squares in batches for about 2-3 minutes on each side until golden brown. Remove with a slotted spoon and drain on paper towels.
Serve
Dust the hot beignets with powdered sugar before serving. Enjoy immediately!
