Making the Béchamel Sauce

    Prepare the Sauce

    In a saucepan, melt the butter over medium heat. Stir in the flour and cook for about 2 minutes until it forms a paste. Gradually add the milk while whisking continuously until the sauce thickens. Stir in nutmeg, salt, and black pepper. Set aside.

Assembling the Croque-Monsieur

    Layering

    Preheat the oven to 400°F (200°C). On a baking sheet, lay out 4 slices of homemade bread. On each slice, place a slice of ham followed by a slice of Swiss cheese. Top with another slice of bread. Spread a generous amount of béchamel sauce on top of each sandwich and sprinkle with Parmesan cheese.

    Bake the Sandwiches

    Bake in the preheated oven for about 15 minutes, or until the top is golden and bubbly. Optionally, broil for an additional 2-3 minutes for extra crispiness.

    In a bowl, combine mixed greens with olive oil, balsamic vinegar, salt, and pepper to taste. Toss to combine.
