Prepare the Custard

In a saucepan, heat the heavy cream over medium heat until it just begins to simmer. Remove from heat and split the vanilla bean lengthwise, scraping the seeds into the cream. Add the vanilla pod as well and let it infuse for 15 minutes.

Whisk the Egg Yolks
In a mixing bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and slightly thickened.

Combine Mixtures
Remove the vanilla pod from the cream and slowly whisk the warm cream into the egg yolk mixture, ensuring to blend well.

Strain the Mixture
Strain the custard through a fine-mesh sieve into a large measuring cup or bowl to remove any curdled bits.

Bake
Bake in the preheated oven for 35-40 minutes, or until the custards are set but still slightly jiggly in the center. Remove from the oven and water bath, and let cool to room temperature.

Cover the ramekins with plastic wrap and refrigerate for at least 2 hours or overnight.

Using a kitchen torch, caramelize the sugar until it forms a crispy, golden crust. If you don’t have a torch, place the ramekins under a broiler for a few minutes, watching closely to prevent burning.
