Prepare the Squash
Preheat your oven to 400°F (200°C). Cut the local squash into bite-sized cubes and place them in a large bowl.

Roast the Squash
Spread the seasoned squash out on a baking sheet in a single layer. Roast in the preheated oven for about 25-30 minutes, or until the squash is tender and golden brown, stirring halfway through.

Prepare the Chickpeas
While the squash is roasting, rinse and drain the canned chickpeas. In a bowl, toss them with a little olive oil, salt, and paprika. Spread them on another baking sheet and bake in the oven for about 15-20 minutes, or until crispy.

Make the Tahini Yogurt
In a small bowl, mix together the tahini and plain yogurt until smooth. Add a pinch of salt to taste.

Once everything is cooked, place the roasted squash on a serving platter. Drizzle with tahini yogurt, spoon over the green chili salsa, and top with crispy chickpeas.
