    Prepare the Onions

    In a large pot, melt the butter and olive oil over medium heat. Add the sliced onions and cook, stirring frequently, until they are deeply caramelized, about 30-40 minutes.

    Add Garlic and Wine

    Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant. Pour in the white wine and scrape up any browned bits from the bottom of the pot. Let it simmer until the wine is reduced by half.

    Add Stock and Simmer

    Add the veal stock, bay leaves, thyme, salt, and pepper. Bring the soup to a simmer and let it cook for another 30 minutes, stirring occasionally.

    Prepare the Bread

    While the soup simmers, preheat the oven to 350°F (175°C). Place the slices of French bread on a baking sheet and toast in the oven until golden brown, about 10 minutes.

    Assemble and Broil

    Remove the bay leaves from the soup. Ladle the soup into oven-safe bowls, top each bowl with a slice of toasted bread, and sprinkle generously with grated Gruyère cheese. Place the bowls under the broiler until the cheese is bubbly and golden, about 5-7 minutes.
