    Prep the Ingredients

    Dice the bell peppers, onion, and Parisian ham. Set aside.

    Cook the Vegetables

    In a skillet, melt 1 tablespoon of butter over medium heat. Add the diced bell peppers and onion, sauté until softened (about 4-5 minutes).

    Add Ham

    Stir in the diced Parisian ham and cook for an additional 2-3 minutes until heated through. Remove from the skillet and set aside.

    Prepare the Eggs

    In a bowl, whisk together the eggs, salt, and black pepper until well combined.

    Cook the Omelette

    In the same skillet, melt the remaining tablespoon of butter over medium-low heat. Pour in the egg mixture, gently swirling to coat the bottom of the pan.

    Add Filling

    Once the eggs start to set (about 2-3 minutes), add the sautéed vegetables and ham to one half of the omelette. Top with shredded Gruyère cheese.

    Fold and Serve

    Carefully fold the omelette in half and cook for another 1-2 minutes until the cheese is melted. Slide onto a plate and serve warm.
