Prepare the Toast
In a skillet, melt 1 tablespoon of butter over medium heat. Add the slices of country bread and toast until golden brown on both sides. Remove from the skillet and set aside.

Assemble the Croque Madame
On two slices of toasted bread, layer the Parisian ham and half of the grated Gruyere cheese. Top with the remaining slices of bread to form sandwiches.

Cook the Sandwiches
In the same skillet, add another tablespoon of butter. Place the sandwiches in the skillet and cook until the bottom is golden brown, about 3-4 minutes. Flip and sprinkle the remaining Gruyere cheese on top. Cover the skillet to help melt the cheese, cooking for another 3-4 minutes.

Fry the Eggs
While the sandwiches are cooking, use a separate non-stick skillet to fry the eggs sunny side up. Cook until the whites are set but the yolks are still runny.
