    Prepare the Seafood

    Rinse the shrimp, white fish fillets, and mussels under cold water and set aside.

    Chop the Vegetables

    Chop the onion, garlic, carrot, and celery into small, even pieces. Dice the tomatoes and chop the fresh parsley.

Cooking

    Sauté the Aromatics

    In a large pot, heat the olive oil over medium heat. Add the chopped onion, garlic, carrot, and celery. Sauté for about 5 minutes until the vegetables are softened and fragrant.

    Add the Tomatoes

    Stir in the diced tomatoes and cook for another 3 minutes until they start to break down.

    Pour in the Liquids

    Add the fish stock or vegetable broth and white wine (if using) to the pot. Bring to a gentle simmer.

    Add the Seafood

    Once the broth is simmering, add the shrimp, white fish, and mussels. Cook for about 5-7 minutes or until the seafood is cooked through and the mussels have opened.

    Season the Soup

    Season with salt, black pepper, and red pepper flakes (if using) to taste. Stir in the chopped parsley just before serving.
